The Rock Candy Making Process.
First the candy maker brings sugar and water to a boil, then adding glucose and adjusting the temperature to a specific level and lets it cook for about half an hour, then liquid flavouring is added to the mixture.
Once the mixture is evenly blended it is poured onto a cooling table. At this point the flavouring (and colouring) is added. once the colours are added the candy maker keeps blending while the cooling table brings the temperature down to levels where the mixture becomes malleable.
The different pieces are then separated by colour but on a heated table (to slow the hardening process). Now they can create the shapes and text which will ultimately form the core design of the rock sweet. Layering together all the pieces (like a giant jigsaw puzzle). A jumbo version of the rock sweet is made and then stretched, it is then cut to the desired size for sweet or rock sticks.
